Danks Street Depot was established in February 2002 by Melanie Starr & Jared Ingersoll. We believe our Cafe is the best environment in which to enjoy wonderful food, drinks & service. In 2005 we were fortunate to have the opportunity to expand our business and now boast a beautiful and comfortable cocktail bar which was chosen by Tourism New South Wales & Vogue Magazine as a ‘must when visiting New South Wales' Danks Street Depot was founded on principles of the Slow Food movement - practising sustainable and ethical principles in sourcing raw ingredients to create delicious and nutritious cuisine. Consistent with this philosophy, Danks Street Depot supports local producers, ensuring quality seasonal produce and minimising unnecessary transportation and storage. Our daily changing menu has always taken the best that the markets have to provide and then we simply offer it in a beautiful, unfussy and approachable way. We proudly support the wonderful efforts of small scale and artisan food and drink producers, we go to great efforts to build strong relationships. When purchasing anything for our menus we always try to source local produce. We are currently implementing an ‘All Australian' policy across our menu, this means that all products used in the production of any of our dishes are Australian as much as is possible and we work closely with our farmers and producers to develop . It also means that all beer and wines sold in our bar are Australian produced. Our team is very proud of our achievements and look forward to your visit. I have put into this book just a few of my favourite recipes from Danks Street Depot as well as recipes that hold a special place in my heart. In March 2007, Sharing Plates was released. Sharing Plates is all about getting together with family and friends to celebrate good food. In writing this book I took inspiration from the changing seasons and from our monthly ‘Bar Food Nights' in which we celebrate the ‘pleasures of the table'.
